Monday I could eat this Roasted Squash and Lentil Curry straight out of the pan on it's own. It is wholesomely delicious and very warming for this time of year. Lentils are such a great staple that are healthy and price conscious as well! Serve it over fluffed up couscous and it will be all you need after a long day.
Tuesday I have said this before, and am saying it again, salmon is absolutely one of my favourite fish. I can have it cooked any way imaginable and I love it. This Grilled Salmon with Mushroom Wild Rice can be great for a week night dinner or for entertaining guests.
In the original recipe for this salmon, it was cooked over a barbecue. For winter, just put it in a shallow baking dish and bake it or around 25-25 minutes in a 350 degree F oven.
Wednesday This Chicken and Broccoli Casserole is so downright comforting. I make it a few weeks back for a Friday night dinner after a long and busy day. It was well received by everyone in the house. We served it with rice and it was just delicious!
Thursday Okay, so I had to put this on the menu this week, because it features in our house at least every second week. This Spaghetti with Fresh Marinara Sauce is one of my kids' staple meals and it is just never wrong somehow. If you are into planning ahead and making big batches of stuff. This dinner will only involve opening a jar and cooking some spaghetti. I like to make big batches of this Marinara Sauce (see canning method) and keep in on hand for busy times. Serve with a salad and some bread if you like for a pretty filling meal.
Friday Time to kick back and put your feet up. Why not enjoy this Fancy Beef Burger this evening. You can make it more filling by adding Salt and Vinegar Crispy Fried Potato Slices on the side. This is really good, I mean really good. A perfect way to end off the week. Don't forget the wine!
