Way back in May of last year when I started this blog, I wasn't really sure what direction it was going to take. All I really knew was that I loved cooking, writing recipes, eating food, sharing food, photographing food...you get the picture. I didn't know a whole lot about food blogs or what readers were looking for when they search food blogs. Eight months on, I am not too certain I am any wiser...ha! However, something I have learned is that people are busy. Also, if people are searching recipes they usually want to cook something. Or at least, the idea of cooking something.
Shortly after I started writing this blog, I started a section on my blog called Menu of the Week. After writing it for about two months, I realized people just were not that into it. I was putting up a three course meal that you could do when you had a whole afternoon on your hands. Lets face it, that doesn't happen too often. I decided to take that section down and revisit it later. Later is now.
So with this Weekly Menu, I am hoping to put together five one dish dinners that could help take the stress away of what to cook. For several years, I sat down every Sunday night and wrote out a menu for the week. It made my life easier when the kids were small and there wasn't too much time to think. I still shop for the week and deal with what is in the fridge to get us through the week, and that in itself takes the stress away for me.

Monday A great way to start the busy week ahead with this Tomato and Rosemary Chicken. Just bake some potatoes on the the side and you are all set.
Tuesday This all in one Fussili Pasta Bake with Zucchini and Bacon is a great way to end a busy day. Get home, put to together, in the oven and relax while the oven finishes it off.
Wednesday Hump day already! Celebrate with Siracha Beef Tacos with a Mango Salsa. Delicious!!
Thursday I absolutely love this Spiced Roasted Squash Soup. It is one of my favourites. You could always roast the squash the day ahead and have it in the fridge to make the soup quicker in the evening. Serve with crusty bread and you are all set.
Friday Finsih off the week with this Turkey and Mushrooms in a Creamy White Wine Sauce. Goes great over noodles! See you next Monday for the second week of the Weekly Menus!
