This week I can honestly say, we are well into fall! So, happy fall everyone!
I am finally looking forward to the temperature plunging. Hahaha.....plunging around here? Umm, maybe down a few degrees to 26 or so if we are lucky. Apparently, we are in for a hot fall.
As for food, I am still making salads and using the barbecue. But the temperatures have not stopped me from diving into some warming food this past week like the Potato & Spinach Gratin, Three Bean Chilli and Macaroni & Cheese. If you will it long enough, it will come. At least that is my mantra for now.
On the menu this week, we got a bit of everything, like always. Hope you find some inspiration for your dinner table and Happy Cooking!
Monday Diving into the week with this Coconut Chicken & Broccoli Curry. What better way to start the week.
Make ahead: This dish enhances after it sits for a few hours or even a day! You could make it before hand, keep it in the fridge and reheat when ready to serve. If doing it this way, don't add the broccoli until are ready to serve it.
Tuesday That is right, we cannot go a week without pasta. This Sun Dried Tomato & Arugula Tagliatelle makes for a pretty quick stove top dinner for those rushed evenings.
Wednesday I like to reserve this day for Soup day, or in this case Chilli day. This Three Bean Chilli has great flavours and can be done quickly if you use canned beans instead of the dry type.
Thursday These Chilli Shrimp make a super quick dinner. Serve with a side of rice or noodles and you are all set. If you are looking for something else to go on the side, check out some other side dish options.
Friday These Fancy Beef Burgers are just that, fancy. With caramelized onions, fresh mozzarella and a drizzle of balsamic reduction, what could be better.
Make ahead: These are freezable, so you could make a batch in advance and keep them in the freezer. All you need to do is add the fresh ingredients and you are all set.
Saturday This is my absolute favourite chicken sandwich in the world! Well, in my world at least. They do deserve their lofty title of The Best Chicken Sandwiches. Make them for your dinner and see what I am talking about!
Sunday At least once a month, we have this for dinner. Again, any time I find a dish that everyone eats, it goes on repeat forever! Payella isn't as complicated as you may think. Go on and check it out!
Make ahead: Quite often I have everything prepared and ready to go for payella. Then it makes for a super easy supper.
Dessert You just can't go wrong with a good ol' traditional Victoria Sponge Cake. A great way to finish off the week. Another vanilla cake alternative could be the Raspberry Summer Sponge Cake, which is delicious!
