Monday What way to feel better about healthy eating than with healthy soups. So, we are starting this week off with this very nutritious Tomato and Lentil Soup
Tuesday This stuffed Chicken Breast with Caramelized Onions and Spinach is sure to make a great Tuesday evening dinner. I haven't cooked this in so long that I almost forget what it tastes like! I do remember it being delicious and we made it at least a half a dozen times. Maybe this week I will give it a whirl again.
Wednesday These Shrimp and Broccoli Rice Bowls are the perfect way to celebrate hump day. If I had to pick a favourite of this week's round up, it would have to be this one. Easy to put together, tasty and not too bad on the waist line.
Thursday Okay, so this contains feta cheese which isn't exactly light, but you could miss out or just add a little. All that being said as it is Roasted Red Pepper Quinoa with Feta, it might not be too bad after all.
Friday Another end to another work week. Finishing off the week with this Ginger and Citrus Glazed Turkey. Perfect end to a long week. Add some potatoes, green veggies and a salad on the side. Great Friday night dinner.
