Yes I know, the weekly menus have been MIA all summer long. Sorry about that folks. After having my month long vacation, I just never managed to get back into it. So, for those of you that look forward to seeing it, sorry for the absence. Now that summer is coming to and end, fall will soon be settling in and the routines back to normal, the menus will resume! If you have been following the past menus, you will notice that they have changed somewhat. I now include a full 7 day meal plan along with a dessert option. Let's face it, who doesn’t like dessert! These are all merely suggestions to help the weekly cooking feel less like a chore. I always find one of the biggest challenges in cooking is knowing what to cook. Once you got that sorted out, it is all downhill! This week we got warming casseroles, salads, soups and even dessert. So, a bit of everything to think about as we are moving away from summer and back into a busy season ahead! Happy Cooking! Monday Kicking off the week and back to menus with this very creamy and delicious Portobello Mushroom & Spinach Risotto. Diving into the start of a new season! Tuesday I've said this before, I don't make many casserole type dishes. Well, I think I do and then I search the archives and note with interest a growing collection of pasta bakes! They are casseroles as well, right? This Spring Pasta Casserole could be just what you are looking for after a busy day getting back into the routine of September. Wednesday I absolutely love this creamy Chicken with Sun Dried Tomato & Asparagus dinner. Get it for you mid week meal! This chicken goes great with Roasted Rosemary Potatoes. Thursday Soup season is just about upon us, and this week why not try this Roasted Cauliflower Soup for a quick end of the day meal. Serve it with a quick salad and a some bread and you got yourself a filling dinner! Friday Summer hasn't quite finished yet and I know we will still be eating easy salads and grilling for a while yet. So, this salad with warm Mediterranean veggies and chicken could be a great way to see in the weekend. A meal all on it's own. Since it's Friday, pour a cold one. Get the recipe for Mediterranean Vegetable and Chicken Salad! Saturday For some reason, Saturday in the fall is always busy. It seems to be the busiest day of the week for many this time of year. That is why is is great to have meals like this Buttery Lemon Pasta to dive into at the end of the day. All done from start to finish in under 30 minutes. Sunday I have talked many times about how on Sunday, I like to make sure everyone is around the dinner table. Usually, I can achieve this!!!! I also like to make the most of that time, by having a good ol' family dinner. This Caramelized Onion Stove Top Pork is a great way to make that happen. Goes great with mashed potatoes and any great seasonal green vegetables. Dessert Because who doesn't love dessert! This Dulce de Leche Brownie Torte is great for guests, to share with your family or may to eat all by yourself! Go on, indulge. See you all next week for some more delicious menu ideas!
