Last week I was talking about (I think) keeping a stocked pantry. As mundane and boring as it sounds, it really does work. I can't tell you the number of times I was put off making something because I didn't have the "pantry staple" that the dish required. I am working on a post about just that. In the meantime, if you google pantry staple items, you will find oodles of pages that will help you out. I also found when you google that, you get a list of food hoarders as well! A whole different topic that ended up gobbling up at least an hour of my morning...eek. Sometimes google can be a time sucker.
So, keep your pantry stocked so you don't have to miss out on delicious dinners. And remember, substitution can be your best friend.
Monday Diving into the week with this easy Mozzarella & Tomato Stovetop Chicken. Serve it with your favourite salad and dinner in on the table in 30 minutes.

Wednesday Yup, got another soup on the menu for this week. Although, it hasn't really cooled off much around here just yet, I have gotten back into soups. This past week I made two and have them in the freezer ready for those evenings when there is no time or energy to cook. Unlike me being that organized. This Creamy Tomato & Basil Soup is another quick one and doesn't have a lot of ingredients. Serve it with some rustic bread and you are all set!
Thursday Yes, we are having breakfast for dinner and that is fine! I would say that at least every couple of weeks we have some kind of breakfast food for dinner. This Red Pepper, Leek & Mozzarella Omelette could be your ticket to a quick dinner tonight.
Friday Why not give these Mexican Rice Bowls a try for your Friday night dinner? A great one pot dinner to finish off the work week.
Saturday This could be a great dinner to cosy up to after a busy Saturday. Teriyaki Salmon with Stir fry Noodles would make a great weekend meal for sure.
Sunday Finishing off the week with this Pork and Broccoli Stir Fry in a an Orange Sauce. An easy dinner and will leave you satisfied and full. Double up if feeding a crowd this Sunday.
