Welcome October! My most favourite month of all time. Yes, even more than December!
This week, the meal plan is a mixed up concoction of foods that don't really relate to each other, apart from being tasty and quick! I was looking through the blog to see what kind of theme we should have this week, when I realized my brain couldn't come up with a theme. But delicious dinners nonetheless. Monday Starting this week with this Creamy Shrimp and Spinach dish. Everyone in my family loved it and we have made so many times and has been added to family favourites.
If you love creamy pasta dishes, but shrimp isn't your thing, you might just love the Chicken Alfredo!
Tuesday These Mexican Chicken and Rice Wraps were delicious! Everything I used in these wraps were from leftovers in the fridge. So, it was super easy and quick. However, in the recipe you will see the method to make it all from scratch. Let's face it, you will most likely not have Mexican Rice just hanging around in your fridge. Or maybe you do. In any case, it's all in the recipe!
Wednesday Okay, so it still isn't quite soup season around these parts just yet. I am longing for the temperatures to drop just a little so I can start making soups again. Leek and Potato Soup is quite possibly one of my all time favourite soups. It is that good! Easy from start to finish and delicious on a chilly autumn day!
Check out all the the other soups if you are feeling like something a little different.
Thursday Stir frying is a great way to get dinner on the table quickly. This Chicken and Broccoli Noodle Stir Fry is one to file in favourites for the autumn. High on flavour and on the table in 30 minutes. The sauce is sweet enough for kids but packs enough of a punch for the bigger folks as well. A great mid week meal for the busy fall ahead.
Looking for an alternative to chicken? This dish can easily be done with beef, pork or even shrimp. So many options. Check out the Shrimp Fried Rice for an alternative stir fry.
Friday Why not try this Veggie and Soy Bean Sprout Stir Fry for dinner! It is great on it's over, over rice or even noodles. Add any other vegetables to this dish that you may have in your fridge. I used what I had but would be just as good with added broccoli, green beans or even asparagus.
Saturday A great dinner for a busy Saturday. This Warm Chicken and Avocado Salad is a bit like chicken fajitas on a plate, minus the wrap! After I made it, I realized they are just like chicken fajitas. Yum! A bonus, it is done in just about 20 minutes so it's a quick dinner to boot.

Sunday This Stewed Tuna in Onions is one of my all time favourite local dishes where we live. If you love fresh tuna, you will LOVE this dish. Almost every tapa bar will have this on their menu as a tapa, side dish or main course. It is truly hearty, filling and delicious. It is great on it's own with bread, or with potatoes or french fires.
Dessert This over the top, completely decadent, sugary, lemony, little piece of heaven cake is divine! If love lemon meringue pie you will love this Lemon Curd Filled Meringue Cake.
