It's all about the comfort this week. We are now officially into fall and most people are trading flip-flops for woollen socks, sangria for Irish coffee, and swimming pools for hot tubs. Not so much around here just yet, but I can still dream of the delights of warming dishes and frosty nights.

Monday This Maple Glazed Chicken is such and easy dish and a great way to start the week. Serve with rice or couscous for a full meal.
Tuesday This was one of the top viewed recipes on the blog last year! Mike's Slow Roasted Carrot and Ginger Soup. Rich in flavour and high on comfort, this soup has it all.
Wednesday What better way than to celebrate half way through the week than with this delicious Chicken, Leek and Broccoli Oven Pasta. No side dish needed!
Thursday Last week, I made this Butternut Squash Risotto for the very first time and it was so good. In fact, I was told by the husband that it was the best risotto I have ever made. Well, I'll take it!
Friday Fish Pie is timeless and delicious. By using a mix of fish and seafood in this dish, you really get quite the delicious meal all in one pot! The photo is a bit dated, but it still tastes wonderful.
Saturday Admittedly, I have only made this dish once! After looking through the blog the other day, I came across this dish and remembered how comforting it was. Get this Hot Paprika Chicken with Sautéed Spinach on your menu this week. Serve with some baby roasted potatoes for a complete meal.
Sunday This past weekend, I had the best lasagna of my life! True fact. It was a vegetable lasagna with a white sauce and it was not made by me. Now, if only I could figure out how to recreate it for myself. Ummmm. In the meantime, this is comfort food at it's very best with this Roasted Squash and Zucchini Lasagna. A great take on a traditional lasagna.
Dessert I can't think of a better way to head into fall than with this Classic Apple Crumble. Apples and fall just go together so well and this traditional crumble would be welcomed on any crisp day ahead.
