Last Monday, I failed with the meal plan due to zero Internet access. By the time we got it back, we were well on our way to the end of the week. Clearly too late to post a weekly meal plan. So here we have last week's meal plan just a week late. Ha! My favourite dish for this week has to be Mike's Chicken Curry. If you love Indian food (or Indian inspired food), this is a must try recipe. Okay, it is a bit on the hot side, like just a bit! However, it is full of real deep flavours and has quite possibly become my favourite chicken curry. Take a look at it. If hot food isn't your thing, I don't advise you to make it. My son pretty much runs away when we make it. No joke! Apart from that, there are lots of other delights this week, including a hearty pasta dish, baked fish and more. Happy Monday and Happy Cooking! Monday It's finally comfort food season and I am making the most of it! Kicking off warming food this week with this very delicious to dive into Tomato & Mozzarella Baked Penne. If you love pasta and cheese as much as I do, this one will be a keeper for the winter. Tuesday My kids love these Easy Beef Wraps. So easy to make and done in no time at all. Makes for a great mid week meal. Check out the Beef Burritos and Loaded Quesadillas for other great wrap recipes. Wednesday Okay, so here is a dish from Mike, my husband. In case you are just tuning in as to who he is. He adapted this recipe from The BBC Good Food. He loves hot and spicy food, me, not so much. I do love the flavours of spices but not too hot. This is one of his favourite dishes to make and I have to say it packs a punch but is loaded with flavour. It can be tamed with yoghurt on the side. Check out Mike's Chicken Curry the next time you want to spice up your dinner! Thursday I absolutely love these Mexican Rice Bowls. I make them so often that you think I would be sick of them, but I am not. Well, at least not yet. These rice bowls make a great lunch or even dinner. I was even just thinking that it would make for a nice filling inside a wrap alongside some crisp lettuce and maybe even salsa and sour cream. Friday I love food on sticks and you can't beat a good chicken kebab. These Sweet and Spicy Kebabs have just the right amount of sweet and sour and go great with just a crisp green salad. I baked these in the oven, but you could just as easily barbecue them for better flavour in the warmer months. Saturday Dinner doesn't always have to be an elaborate event. Quite often we have tapa style dinners that are just as satisfying. These Empanadas de Carne are a great example of how you can turn a snack food into dinner. Sunday I love the subtle flavour of perch. I first came across it about 10 years ago and bought it not knowing what it was. That happens a lot in Spanish fish markets. After cooking and tasting it, I was surprised that I hadn't had it before. I don't cook it often enough as it is a great fish. This Crusted Perch with Parsley Sauce is absolutely divine! Dessert With citrus season upon us shortly, why not make the most it in your baking. This Raspberry Lemon Loaf cake is a great way to use up fresh lemons. You could even make Lemon Curd as a topping for an utterly decadent dessert! Check back next week for some more delicious menu ideas!
