Clearly I am not obeying with the normal January rules of "cutting back". The day started out good and then morphed in this cake plus another piece of cake at a party. Tomorrow is a new day!
Anyway, I was watching a TV show, The Middle, to be exact. I only just discovered that show a week ago and I am addicted.. They were eating vanilla cake with chocolate frosting. This used to be one of my all time favourite cakes as a kid, a teen and an adult. So, where does that leave me now? Well, I forgot about this cake along the way. So, when the show finished, off I went to knock it up. I might have lost my patience in waiting for it to cool. I frosted it a bit early which is why you see frosting running down the sides of the cake, It may not win any beauty contests but it won over my taste buds this afternoon.
Vanilla Cake with Chocolate Frosting
Makes a one layer 8 inch square cake
For the cake:
1 1/2 Cups/190 grams flour
1 Teaspoon baking powder
1/2 Teaspoon salt
1/2 Cup/110 grams butter, at room temperature
3/4 Cup/150 grams sugar
2 Eggs, at room temperature
1 Teaspoon vanilla
1/2 Cup/120 ml milk
For the frosting:
1/4 Cup/55 grams butter, at room temperature
1/4 Cup/60 ml milk
3 Tablespoons cocoa powder
1 Teaspoon vanilla
1 1/2 Cups/190 grams icing sugar
Preheat oven to 350 degrees F. Grease and line an 8 inch square baking tin.
Sift together the flour, baking powder and salt . Set aside.
In a large bowl, mix the butter on high speed until smooth and then add the sugar. Continue mixing for about 3 minutes or so. Mix in the vanilla and add eggs one at a time , mixing well after each addition .
Add the flour and milk to the batter in three additions, starting and ending with the flour. Mix just long enough so the flour is incorporated.
Pour batter into prepared pan and bake for 20 - 25 minutes . Cake will be done when toothpick inserted in centre comes out clean . Remove from oven and leave to cool in the pan on a wire rack for about 5 minutes . Remove cake from pan, remove parchment paper and leave to cool completely on the wire rack .
While the cake is cooling, make your icing. In a medium bowl, mix the butter on high speed until smooth. Add in the milk and vanilla. continue to mix until smooth. Whisk together the icing sugar and cocoa powder. Pour this into the butter mixture. Mix on high speed until it comes together. It may need a little more milk, if it is too hard. Add as needed.
Once the cake has cooled completely, transfer to a serving plate and frost the cake with the frosting. Will keep for about 3 days in an airtight container.
