When we were away this past week, I had the best strawberries and raspberries of my life! I swear, that is not an exaggeration at all. They were so perfectly sweet and ripe that nothing in my memory could compare. So, upon arriving home, I decided I had to somehow recreate those flavours.
The fresh mint and squeeze of orange juice give this fruit salad extra flavour. Mint seems to go so well with berries of all types. I managed to find raspberries, blueberries and strawberries yesterday, so that is what is in this mix. The added mango gives a great flavour as well.
This is great at breakfast, brunch or as a dessert. Fresh cream or Greek yoghurt would be a great addition if serving as a light dessert..
Triple Berry and Mango Fruit Salad
1 Large ripe mango, roughly cut into slices
2 Cups/400 grams of fresh strawberries, halved
1 Cup/125 grams of blueberries
1 Cup/125 grams of raspberries
1 Tablespoon of sugar
Juice of one orange
Mint leaves, roughly torn
In a large bowl, combine all the fruit. Top with the sugar and orange juice. Stir well to combine and toss in the mint. Give another stir. Cover and refrigerate for about an hour before serving.
