This is so basic and not really a recipe at all. However, it is one of my favourite breakfasts.
Tostada con Tomate or Toast with Tomato is a very traditional breakfast here in Andalucia. Moving over here a million years ago, I thought it quite a strange breakfast. However, I learned quite quickly to love the subtle flavours of these little bites. Quite often it would be served with ham. Not just any ham but Jamon Iberico. Not a flavour that can be easily described as there is nothing in the world like it. That would be my son's favourite as he is the connoisseur!
Tostada con Tomate
Makes 4 Slices
4 Slices of good rustic bread, any kind you prefer
2 whole tomatoes
1 Garlic clove
Sea salt (if you like)
Roughly chop the tomato and toss it in the blender until it is quite liquidly. Pour it into a serving dish and let it settle for about 10 minutes. I always do this, because the tomato thickens over time.
Toast your bread.
Rub the garlic clover over the toast, drizzle with olive oil and spoon over your tomato. You can sprinkle with a little salt if you like. Great flavours!
