Got 5 minutes? Well, get this super easy and tasty salad. This is one of the very posts I made on this blog after starting just about a year ago. It is back into the season of barbecues and salads and I thought this salad deserved a little refreshing and update to bring it back to life. In case you missed in on the blog previously, here it is making it's re entrance.
This is probably one of my favourite salads to have alongside a barbecue. Easy fresh ingredients that take no time to put together. Perfect for entertaining when you want to spend less time in the kitchen and more time with your friends.
I have added arugula to this salad which I did not do in the original post. I love arugula and is goes really well with the flavours in this simple salad.
As lovely as this salad is on it's own, it would also be nice with the Cucumber Raita as a dressing or on the side. This salad is a great addition to any barbecue, which was just how we had it today. Yes, a barbecue on a Monday afternoon!
Like many salads, this can be made a few hours in advance and refrigerated. If doing this to save on time, don't drizzle over the olive oil or salt until just before serving.
Tomato, Feta & Mint Salad
Serves 4 / Prep time: 5 minutes / Cook time: None
4 tomatoes, cut into wedges
1/2 Cup/50 grams of feta cheese, crumbled
A few handfuls of fresh arugula
Small handful mint leaves, roughly torn
Drizzle of olive oil
Arrange the arugula leaves on a large plate. Toss over the tomatoes, feta & fresh mint. Drizzle with olive oil and a sprinkling of sea salt. Done!
