I have been having a busy few days with pretty much no time for the kitchen. That will change on Monday. In the meantime, here is a quick party nibble that can be thrown together in just minutes. You can up the quantity easily for bigger crowds. I wasn't making them for a crowd, so the recipe written below makes 24 cocktail sticks. They are just one little bite each. A great make ahead party favourite of mine.
Tomato and Feta Bites
Makes 2 dozen
12 Cherry tomatoes, halved
Feta cheese, cubed (enough to cut into 24 small cubes)
Drizzle of olive
Fresh sea salt
Small bunch of fresh chopped mint
Skewer 1/2 of a cherry tomato onto a cocktail stick with a piece of cheese. Repeat for all cocktails sticks. Arrange on a serving plate. Drizzle over olive oil, sprinkle over a little salt and top with fresh mint. Can be a made a few hours ahead, covered and refrigerated.
