I don’t even know what to say. These are the ultimate, over the top, rich, chocolatey, dense, delicious brownie you’ll ever make and eat. Where a brownie met some fudge. I bring to you The Ultimate Fudge Brownie!

What are These Brownies Like

  • Difficulty – These are pretty easy to make. They just take a bit of time with the two layers.
  • Taste – A super rich and dense brownie that’s almost like fudge. Topped off with a decadent cream cheese frosting.
  • Serving – This recipe makes a big sheet pan full of brownies. I cut mine into 30 brownies. Great for parties.
The Ultimate Fudge Brownie

Ingredients

For the brownies:

  • 5 oz dark chocolate roughly chopped
  • 2/3 Cup butter
  • 4 eggs
  • 2 Cups sugar
  • 1 1/4 Cups flour
  • 1 Teaspoon vanilla

For the cream cheese frosting:

  • 8 oz cream cheese softened
  • 1/4 Cup butter
  • 2 1/2 Cups powdered sugar sifted
  • 1/2 Cup cocoa powder sifted
  • 1 Teaspoon vanilla
  • 1 Tablespoon milk (if desired)

Instructions

  1. For the brownies:
  2. Grease and line with parchment paper a 9 x 13 inch baking dish. Set aside.
  3. Preheat oven to 375 degrees F.
  4. In a medium saucepan set over low heat, add the butter and chopped chocolate. Stir until melted, about 3 -4 minutes. Remove from heat.
  5. In a large mixing bowl beat the eggs and sugar on a high speed until just until combined, about one minute. Stir in the vanilla.
  6. Pour in the melted chocolate and stir until combined.
  7. Add flour and stir until just combined, don’t over mix.
  8. Pour batter into prepared pan and bake for 35 – 40 minutes or when a toothpick inserted in the center comes out clean.
  9. Leave to cool completely on a wire rack in the pan.
  10. For the cream cheese frosting:
  11. Sift together the powdered sugar with the cocoa powder and set aside.
  12. In a large mixing bowl, beat the cream cheese on high speed for 1-2 minutes. Add the butter and continue mixing on high speed for another minute. Mix in the vanilla.
  13. Sift in the dry ingredients and continue mixing until it comes together, about a minute. Add milk or cream if using and mix for just a few seconds.
  14. Frost brownies with the cream cheese frosting.
  15. Can cut into squares straight away or cover and refrigerate for a while before cutting.
  16. Store in the refrigerator.

Notes about the brownies

  • Stick to the recipe – Don’t stray from the recipe!  I’m all about making things your own and changing things up to suit dietary needs, etc.  But this time, follow the instructions…haha!
  • Don’t Over Mix The Batter – Mixing batters for too long creates air and gives you a fluffier texture.  Great for cakes, but not what you want here.  So just mix until the batter combines.
  • Get The Baking Time Right – All ovens are different, as I talk about many times.  Mine baked these is just under 40 minutes flat.  So, check them at 35 minutes and see how they are going.  Your oven might need more or less time depending on your oven.
