There is still time to get a few roasted dinners in before summer sets in and it's all barbecues and frozen treats. I know I was only just talking about shutting down the oven to let the cobwebs grow over until fall, but who am I kidding? I know that I will still be turning it on mid August when temps peak close to 40 degrees. Why? I am that kind of crazy. Mind you, I probably won't be making too many more dinners like this one until Thanksgiving.

You can never ever go wrong with a whole roasted chicken. If you got the basics down on the cooking, it will be perfect every single time. By stuffing a chicken and adding a few extra touches like lemon and thyme, you will be so surprised how much flavour this chicken has. It is just simply great. I always say that food doesn't need to be complex or difficult. Just some pretty basic stuff and you can get great results every single time.

No roasted dinner is complete without potatoes. These potatoes are a take on the Perfect Roast Potatoes. Although this method doesn't use parboiling before hand, which makes it an easier dish. Still, the potatoes are crispy on the outside and fluffy on the inside. Just how a roasted potato should be. The lemon give these potatoes a fresh and spring like feel.

Asparagus is in full swing around here and so versatile in many dishes. I probably cook with it at least once a week and have many recipes on the site using asparagus, from Sauteed Asparagus with Pine Nuts to Sun Dried Tomato and Asparagus Chicken (a personal favourite of mine that is repeated often), there is a lot to choose from. Here, they are just quickly sautéed with carrots and a splash of sherry for a very flavoursome side dish. All done in about 15 minutes so you can't complain about that.

This just so happens to be the best gravy, ever! Yes, the best. What makes is so great is the slow cooking of the onions to perfection. I can't take credit for the recipe since it's the husband's concoction. I carefully watched, took notes and then made it myself. Although, his did taste better!
