So, we're fortunate enough to have a lemon tree in the garden. Which means I am always trying to find ways to use up lemons. I use them in water, tea, ice tea, lemonade (that one, not often), for baking, cooking and even decorating at times. What's not to like!
This year the tree has been full of lemons since December and we are now almost at the end of April and there is still not end in sight. Again, not complaining at all. Until the tree runs dry, I'm going to keep on using the lemons.
One of the things that has been top of my list to make this winter was preserved lemons. Guess what? It just hasn't yet. I have pretty much no excuse expect I just kept saying "Tomorrow.". And then tomorrow never comes, of course. But this week, I really want to try and have a serious attempt at making them. If I do finally get around to it and they are successful, I'll share them here on the blog and we can see how much we love or hate them.
Preserved lemons are used in quite a bit of Moroccan food and I just kind of fancy having a try and making them. So, I'll keep you posted on the lemons.
In the meantime, I recently made this Stove Top Lemon Chicken and it turned out pretty tasty. One of the things I love about creating new recipes is having things turn out as tasty as this chicken dish did. Mind you there are just as many disasters that I have talked about on so many occasions.
But for now, I'll take the win!
Notes about the chicken:
I used chicken cutlets in this recipe but you could just as easily use chicken breast. If you do use chicken breast, cut them in half through the middle. Then you might need to flatten them out a little with a kitchen mallet. If I do this, I cover the chicken with parchment paper and then lighten flatten it.
Fresh lemon juice is a must!!! Don't use the stuff that comes out a condiment bottle for this recipe, or you will be disappointed. This recipe is for lemon chicken and the lemon needs to be fresh!
Also, I used an extra lemon to cut into slices and place on top of the chicken while it finished cooking. This is totally optional and mostly for prettiness of the dish. So, you can leave that step off if you like. You will see this in the recipe below.
We served this with baby potatoes and it went down pretty good I must say. The sauce is quite tart but pretty tasty!

Stove Top Lemon Chicken
Serves 4 / Prep time: 15 minutes / Cook time: 30 minutes
4 Chicken cutlets
3/4 Cup/180 ml chicken stock
1/3 Cup/45 grams flour
Juice of one lemon
Zest of one lemon
1 Whole lemon, cut into slices *optional
2 Tablespoons butter
1 Tablespoon olive oil
3 Cloves garlic, crushed
1 Tablespoon sugar
Small bunch fresh chopped parsley
1 Teaspoon salt
1/2 Teaspoon black pepper
Combine the flour, lemon zest, salt and pepper. Stir well.
Dredge the chicken cutlets in the flour mixture.
In a large skillet set over medium heat, add the olive oil and garlic until it sizzles, about a minute. Add the chicken to the skillet and cook for about 5 minutes then flip it over and cook the next side for 5 minutes.
Add the chicken stock, lemon juice, sugar, chopped parsley and butter to the chicken and give a stir. Top with lemon slices (optional). Reduce heat to low, cover and leave to cook for a further 15 minutes.
Remove from heat and serve with pan juices.
