I'm back with a fresh start for January! First recipe of 2020 is a great stove top family dinner that you're all sure to love. And it's healthy to boot, what's not to love. Dive into this Stove Top Chicken and Quinoa dish for a weeknight dinner soon!
It's 2020 and I'm excited to be back after a very long blog break. Gee, I'm trying to figure out if I can even remember how to do this whole recipe writing thing? I'm going to give it a go and let's hope it turns out!
I hope you all had a great Christmas or whatever celebrations you enjoyed. We had a very quiet Christmas at home this year and I didn't even cook a turkey. And you know what? I didn't even miss it. Admittedly the day did feel as if something were missing. But I got over it when I didn't have to clean up...ha! I'm not sure it's the new way forward, but it was what worked for this Christmas.
It was also a pretty hot Christmas this year. The sun was scorching and there were even people in the sea at the beach. I'm not judging, but they just might be crazy. The sun might have been shining but a tad on the chilly side for me. Mind you, even when the sun is beating down kissing the high 30s, you won't find me paddling the waves.
So after a very long break, I sat down last week with a list of new dishes on my hit list to create. Starting today with this Stove Top Chicken and Quinoa dish. I surprised myself with this one as I wasn't really sure how it was going to turn out. Well, it was a winner and the whole family enjoyed it. When I see empty plates, I know we got a winner.
Let's take a closer look.
Have your knives sharpened and chopping boards ready and let's do some cooking.
Remember, always read the recipe to the end before starting to cook. You'll find the full recipe at the end of all the photos. Here in the step-by-step, I don't include exact measurements and such. It's more of a visual aid to help you along. If you don't need the help along the way, just skip to recipe at the bottom to get down to business.
First up, get all your chopping out of the way and ready.
Heat olive oil in a large oven proof skillet and toss in the vegetables, garlic and oil. Stir it around and cook it for about 5 - 8 minutes or until the vegetables are soft.
Add the cubed chicken and all the seasonings listed in the recipe below. Give it a good stir to brown the chicken for a few minutes. You are just looking to brown the chicken at this stage, you don't want to cook it.
Add the remaining olive oil to the pan with the dry uncooked quinoa. Give it a really good stir to coat the quinoa and then add the can tomatoes and stock.
If using whole tomatoes, break them up with a wooden spoon. Bring this to a gentle boil, reduce heat to medium low and cover. Leave to cook at this stage for 10 minutes.
Add the blanched broccoli. What does that mean? Basically just pour boiling water over the broccoli and then cold water. This helps the broccoli keep it's green colour when cooking. So, once you have blanched the broccoli, add it to the quinoa. Give a quick stir, cover and leave to cook for a further 10 minutes or until the liquid has all absorbed.
This next step is completely necessary, but we loved the addition of mozzarella. If you're not a fan of cheese, or want to keep the calories down, omit the cheese. But I'm just saying, the cheese adds a tasty touch!
So, if using the cheese, take it off the stove top, add the fresh grated mozzarella and fresh parsley. Put it under the broiler/grill for about 5 minutes until the cheese melts and is bubbly.
And done! A delicious all in one pan dinner for six. A hearty but healthy way to get dinner on the table in January. What's not to like!

Stove Top Chicken and Quinoa
Serves 4 / Prep time: 10 minutes / Cook time: 40 minutes
1 lb/500 grams chicken breast, cut into bite sized pieces
1 1/2 Cups/270 grams quinoa, uncooked
1 Red pepper, finely diced
3 - 4 Medium carrots, peeled and finely diced
1 Small yellow onion, peeled and finely diced
1 Small head of broccoli, cut into small florets
2 1/2 Cups/600 ml chicken stock
1 14 oz Can whole or diced tomatoes
1 Ball fresh mozzarella, grated
4 Garlic cloves, crushed
3 Tablespoons olive oil, divided
1 Teaspoon dried oregano
1 Teaspoon dried basil
1 Teaspoon salt
1 Teaspoon black pepper
Small bunch fresh chopped parsley
Set a large oven proof skillet on the stove top over high heat. Add 1 tablespoon of olive, all the garlic, peppers, carrots and onions. Give a good stir and brown for a 2 - 3 minutes. Reduce heat to medium and continue to cook for 3 - 4 more minutes or until soft.
Increase heat back to high and add the cubed chicken, basil, oregano, salt and pepper. Stir to coat completely and brown the chicken for about 2 - 3 minutes. Add remaining olive oil and quinoa. Stir really well. Add the can tomatoes and stock. Break up tomatoes with a wooden spoon if using whole tomatoes. Reduce heat to medium low, cover and leave to cook for 10 minutes.
Place the broccoli in a colander and pour over boiling water and then pour over cold water.
Remove lid from the quinoa and add the broccoli. Give a quick stir, cover and leave to cook for a further 10 minutes or until all the liquid has absorbed.
Remove from stove top. Sprinkle over fresh mozzarella and fresh parsley. Put under a broiler in the oven for 5 minutes or until cheese is melted and bubbly.
Serve and enjoy!
