Sometimes, simple is all you need. It's just a plain ol' chopped salad but it does taste good. I don't know if it is just me, but when you chop something really thin, you can taste it better. I am sure that is just me, but that is how I feel about salads that are "shredded" I absolutely love celery, and in this salad, it shines through. I have used a honey mustard vinaigrette as it adds extra flavour to some pretty basic vegetables. Last night we served this with the Salmon and Leek Cakes. It was a pretty good combo!
Shredded Veggie Salad
1 Small red pepper, thinly sliced
1 Small green pepper, thinly sliced
1/2 White onion, thinly sliced
2 Celery ribs, cut into 3 sections cross ways and then thinly sliced
1/2 Head of an iceberg lettuce
For the dressing:
2 Tablespoons of olive oil
2 Tablespoons of white wine vinegar
1 Tablespoon of honey
1 Teaspoon of mustard
Salt and pepper
Combine all salad ingredients in a large bowl and toss to combine. Make the dressing, by adding the ingredients in a small jar and shaking to combine. Pour the dressing over the salad just before and give a good toss. Only do this just before serving as the lettuce will wilt. A simple and fresh salad!
