This is one of those dishes that you just have to feel good about eating. No badness whatsoever, so no guilt afterwards. However, I must admit I didn't think too much of it when I first was served it some years back. Recently, I was reintroduced to this dish while staying in a B & B. It was served as a starter to the evening dinner. I was hooked. When I got back home, it was the first thing I had to make.
Sautéed Spinach and Chickpeas
In a vegetable steamer, add the spinach and leave until it has wilted. Them remove and set aside. this will only take a couple of minutes.
in a medium skillet, add a little olive oil, garlic and cumin seeds. Fry for about one minute or until you can smell it cooking. Toss in the chickpeas and stir until all the flavours have combined. About 3-4 minutes. Now add the ground cumin and sea salt and cook for a further minute. Remove from heat. Add the spinach to the chickpeas and stir well to combine.
Ready to eat straight away and packed full of goodness.
