Asparagus is probably my favourite green vegetable. I know it isn't a traditional green vegetable on the Christmas dinner table, but it is always on my dinner table. The addition of toasted pine nuts, really give this asparagus a great flavour and crunch!
Sautéed Asparagus with Toasted Pine Nuts
Small bunch of thick cut asparagus, ends trimmed
2 Spring onions, thinly sliced cross ways
2 Tablespoons butter
1 Garlic clove, crushed
3 Tablespoons pine nuts
Salt and pepper to taste
In a small skillet set over medium heat, toast your pine nuts for about 3-5 minutes. Shake the pan lightly and as they toast, otherwise you risk burning them. Remove from heat and set aside.
In a medium skillet set over medium heat, melt the butter and garlic. Add the asparagus and give a good toss. Cook for about 5 minutes and then toss in the spring onions. Continue to cook until the asparagus softens, about 3-5 more minutes. Remove from heat and sprinkle with toasted pine nuts.
