I has been ages and ages since I have made any kind of stuffing. I am sure it must have been some time in mid spring. Yesterday was the perfect occasion to go alongside that Lemon and Rosemary Roasted Chicken.
In the recipe below it just states to use breadcrumbs. Don't use store bought ones, it is much better to make your own. You will be disappointed if you use ready made bread crumbs. I used whole wheat bread in this recipe and I think it was about 6 or 7 slices of bread. I just put them in the food processor and whizzed them up for a a few seconds. It works a treat! By making your own breadcrumbs, it will ensure a stuffing that is worthy of any dinner table.
Rosemary and Walnut Stuffing
4 Cups of bread crumbs, About 6-7 slices of bread
2 Tablespoons of butter
1/2 Onion, finely chopped
1/2 Cup/65 grams of walnuts, roughly chopped
1 Sprig of fresh rosemary
Small bunch of fresh parsley, roughly chopped
Fresh ground black pepper
In a large bowl, add you breadcrumbs and mix in the butter. Use your fingers to incorporate the butter completely into the breadcrumbs. Toss in the walnuts, onion, rosemary, parsley, salt and pepper. Give a good mix around until it is combined well. Put the stuff in a small but deep baking dish. Bake uncovered for about 35-40 minutes. Remove from oven and cover to keep warm until ready to serve.
