You know those days when there is no time for anything but you want to eat something good? Well, I have lots of those days. These quesadillas are so yummy and quick. Okay, you do need to roast the peppers and that takes about 1/2 hour. But that is something that you can do before hand and keep them in the fridge. As for Flour Tortillas, you can have the home made ones or just simply pick some up at the store.
Roasted Red Bell Pepper Quesadillas
Preheat oven to 350 degrees F. Put the red peppers on a baking sheet and drizzle with one tablespoon of the olive oil. Roast for about 35 minutes or until soft and slightly scorched. Remove from oven and set aside.
Now time to put it all together. So easy!
Lay out each tortilla wrap and fill each middle with the roasted peppers, generous spoon of tomatoes, cheese and coriander. Repeat for each quesadilla.
heat a large skillet and add the remaining olive oil. Fold over each quesadilla into a half moon shape and firmly press it down. Cook on each side for about 2-3 minutes or until golden brown. Remove from heat and gently open to add the fresh avocado slices.
