Pan Chicken with Capers

Capers are those strange little things that kids say "yuck" to when they see them on a plate.  I love the tangy flavour they bring to chicken and many other things for that matter.  This is another quick dish that can be put together in no time at all.  I used lemons this time because it is what I had on hand.  However, limes give it more of a punch.

Pan Chicken with Capers

Serves 4  /  Prep time:  10 minutes  /  Cook time:  15 minutes

Ingredients

8 chicken fillets, 1/2 inch thick slices
Bunch of fresh chopped coriander
3 garlic cloves, crushed
2 heaped tablespoon of capers plus their juice
Juice of 2 lemons, plus lemon slices for garnish
1 tablespoon olive oil
Salt and pepper

Method

In a large skillet set over medium heat add the olive oil, garlic and capers.  Stir for a few minutes.  Immediately add chicken on a high heat and splash in a little lemon juice.  Continue splashing in lemon juice as you cook the chicken.  Turn it over after about 5 minutes and cook the other side.  The chicken should be lightly browned and still have juices coming out of the centre.  Then you know it is cooked.  Throw in the fresh coriander and salt and pepper to taste.  Give a good toss.  Serve with pan juices and lemon slices on top.
