These peppers are such a great accompaniment to many different dishes. Around here, you will see them on most menus and are quite often deep fried or shallow fried. Although, they are quite tasty that way, I prefer to roast them with just a touch of olive oil oil and a sprinkle of sea salt.
Oven Roasted Italian Green Peppers
8 Italian Green Peppers
2 Tablespoons of olive oil
Generous sprinkling of coarse sea salt
Preheat your oven to 375 degrees F.
With a sharp knife, pierce the peppers in about 2 or 3 places. Place the peppers in a shallow rimmed terracotta dish, drizzle over the olive oil and toss over the salt. Roast for 20 minutes then remove from oven and turn them all over. Roast for a further 15 minutes or until completely soft and a caramelized colour on the peppers.
Remove from oven and serve straight away. These can be served with almost anything. We like them as a side to barbecues, on sandwiches, to accompany a selection of tapas, and much more!
