Time to break out the drinks, snacks and dips because it's Friday! If you have 10 free minutes, you can make this super easy and delicious nacho cheese sauce. Move over "jar sauce", this home made version made with natural ingredients is moving in to stay!
How do you spend your Friday nights? I have been giving this some serious thinking lately as it seems I get excited for Friday nights because I spend it on the sofa! I favour sofa snacks over dinner out, pj's over high heels and dormancy over liveliness.
It wasn't always this way.
My twenties were reserved for, quite possibly, too many nights out which resulted in too many hangovers. In my thirties, I comfortably slid into raising kids and lack of sleep from just that. Now in my forties, I have discovered I have a special relationship with my sofa and sleeping like a baby by ten pm. When I think about it, apparently I spent two decades sleep deprived. So, it's no wonder I am always exhausted. I am just making up for lost time. My sofa, is where you can find me most Friday nights. Yes, that's how exciting I am these days.
I am starting to wonder if this is it? Did life just slide by and I allowed myself to get so comfortable in my home that outside becomes almost daunting past 8:00 pm. I mean, I used to love clubs, parties, dancing, LOUD live music, crowded places, smoke filled (yes it went with the era) bars and arriving home at sun up.
Now, I honestly I really couldn't think of anything worse. Most people say that comes with age. I'm not too sure about that as I know plenty of people a decade beyond me that can still rock well into the wee hours. I think I have become complaisant. I happen to have a husband who can happily go out at any hour and keep up with the live music scene and manage to get up with the birds and have a productive day. And no, I have not married an embryo, he has some serious years one me. I won't get into how many right now. But lets just say more than the fingers on your hands. I know he never reads my blog, so I am safe...hehehe! Sometimes I wonder if he's even aware that I have this little space in my world, ummh?
In any case, tonight, I am certain I will be back on the sofa and snoozing away by ten.
You know what the flip side is for me? I am a total morning person. I love being up at the crack of dawn and out the door before sunrise. This is, what I like to call, my magic time. It's peaceful and dare I say serene. I love it. It's my time and there is no night life in this world that can replace the freshness of a new day.
Okay let's get to this dip, finally!
It's takes a total of 10 minutes and it has so few ingredients. It is a million times better than any jar dip and I think anyone can make it at home with ease.
I used sharp cheddar which worked really well for this sauce. You can replace it with another cheese if you prefer. I did use whole milk as it gives a richer dip. You can easily substitute semi skimmed if it's what you have or prefer.
The basis for making this dip, is starting with a roux sauce. So easy to do and if you follow the very easy recipe below, you shouldn't have any problems.
You can make this in advance and put it in the fridge. When reheating, put the dip in a small saucepan set over low heat. Stir constantly until the dip has melted completely then remove from heat. If you do this too quickly over high heat, you will risk curdling the sauce.

Nacho Cheese Dip
Makes: 1 1/2 Cup serving / Prep time: 5 minutes / Cook time: 5 minutes
2 Tablespoon butter
2 Tablespoon flour
1 Cup/240 ml milk
1 1/2 Cups/6 oz Sharp cheddar
1/2 Teaspoon salt
1/2 Teaspoon chilli powder
In a medium saucepan set over medium to high heat add the butter until melted. Whisk in the flour quickly until a paste forms. Reduce heat to medium low and continue stirring and cooking the flour for about a minute.
Gradually start pouring in the milk whisking as you pour. It will start to thicken as you stir and it cooks. Once you have added all the milk, continue stirring until it thickens about 3 minutes. Remove from heat and all the the cheese at once. Stir until the cheese is completely melted, Season with salt and chilli powder. Stir well and serve immediately.
