Dare I say Christmas! I know, that is a crazy word right about now. But when I made these this morning, that was what came to mind. I found this recipe in Olive magazine from 2012 and thought it looked quite good. I couldn't find the recipe online, so I am only able to link to the magazine.
These brownies are chewy, chocolaty and minty. What could be better? Something tells me they will be making a reappearance in December!
Mint Chocolate Chip Brownies
Makes 25 Brownies
1 Cup/175 grams of dark chocolate, chopped
1/2 Cup/100 grams of butter
1 Cup/200 grams of white sugar
3/4 Cup/100 grams of flour
1 teaspoon of baking powder
1/4 Cup/30 grams of cocoa powder
1 Cup/175 grams of chocolate chips
A few drops of peppermint essence
3/4 Cup/100 grams of icing sugar
2 tablespoons of milk
Preheat your oven to 350 degrees F. Grease and line an 8 Inch baking dish. Set aside
In a saucepan set over a pot of simmering water, melt the chocolate and butter. Remove from heat to cool for a few minutes. Whisk the eggs and sugar for about a minute or so and add in a little peppermint essence. Stir in the chocolate mixture. Combine the flour, cocoa powder and baking powder and sift it over the chocolate mixture. Stir in the chocolate chips. Pour into the prepare pan and bake for about 25 minutes. Remove from oven and let cool completely.
Make the glaze by mixing together the icing sugar and the milk. Drizzle over brownies. Store in an airtight container for several days.
