I got spring on my mind today. Probably because it's just around the corner and I can almost smell it in the air. I am ready to break out the barbecue, capri pants and margaritas!
All that being said, I thought a light & fresh salad would be nice today. I say this when I put salads on the blog, as I don't overly view many of them as recipes, but more as ideas. Sometimes, we are not sure what to put into a salad, which I why I like to just try anything I can find and hope for the best. I find, what really makes a salad is the dressing. Well, maybe a few other key components. But if you have a basic lettuce based salad, it is all about the dressing. The dressing on this salad is a honey lime dressing and it is delicious.
On a very non spring related note, I am trying to decide on whether or not to change the format of the way my recipes are viewed on the blog. Any input is welcome! A friend mentioned to me earlier today that it might be better I put the ingredient list on one side and the method on the opposite side as opposed to below. Might make for easier reading on a small device? So, below you will see this recipe in a slightly altered style. Just a touch!
