I love avocados in pretty much everything. But I really love them in a dip! I am not sure if there really any hard and fast rules to guacamole, but I love it pretty much any way at all. I love it just plain but I also love it dressed up with other things added to it. This particular one has the addition of tomatoes, garlic and onions and is pretty tasty. As long as you have good ripe avocados, you just can't go wrong!
4 Good sized ripe avocados
1 medium sized ripe tomato, diced
1 Small red onion, diced
2 garlic cloves, crushed
Juice of one lemon
Slice open the avocados and remove the stones. Scoop out the flesh and put it in a medium sized bowl. Mash it up with a fork until you have a lumpy texture. Add in the tomatoes, onions, garlic, lemon juice and salt. Stir to combine. Ready to serve! If you are planning to keep it for later, squeeze over additional lemon juice, cover with plastic wrap and refrigerate. Above served with corn chips the classic way!
