Now that the summer season is approaching, it is time to freshen up the salads. This salad can be served on it's own, in a wrap, or as a side dish at a barbecue spread.
Grilled Chicken & Avocado Salad with a Honey Mustard Vinaigrette
First marinade the chicken by adding all the ingredients to a medium bowl and rub it over the chicken. Set aside.
Next, make the vinaigrette by combining all the ingredients in a small jar and shake to combine. Put this into the fridge while you prepare the salad.
Heat a medium skillet over medium to high heat and add a little olive oil and the seasoned chicken strips. Cook each side for about 3-4 minutes. When cooked, remove from the heat and keep warm by covering.
Now, time to put the salad together. Toss the greens in a large salad bowl. Top with the carrot shavings, avocado strips, Parmesan shavings, and grilled chicken. Drizzle over the vinaigrette and top with fresh chopped parsley.
I personally think the dressing is what makes this salad so yummy!
