Could not think of one thing in the world this evening to have for dinner. I was aimlessly walking around the supermarket around 5:00 pm hoping something would pop. Well, it didn't really. That is until I got home back in the kitchen. Why not Green Pesto Chicken Kebabs? I remember having them years ago at a friend's summer dinner party. They were delicious. Okay, I know she made her own pesto and every single morsel of food she makes is delicious.
Anyway, I cheated with these and used the supermarket kind. Mind you, it s a high quality Italian one. Certainly that counts.
This dish contains TWO ingredients. It doesn’t get a whole lot easier than that.
It was served with the Minted Yoghurt Dip.
Green Pesto Chicken Kebabs
Makes 6 Kebabs
2 Chicken breast, cut into 2 inch pieces
3-4 Tablespoons of good quality green pesto
Combine the chicken with the pesto and stir to coat well. Ideally you should cover and refrigerate for a few hours.
Remove from fridge and thread about 5 chicken pieces on each skewer. Repeat for all skewers.
Cook over a hot barbecue for about 5-7 minutes per side. Chicken should be char grilled on the outside and still juicy on the inside.
Recommended to serve straight away off the grill.
