Easy, easy, easy chicken dish! This is one of my go to chicken recipes for guests if I am in a hurry and cannot think of anything else to make. It takes minutes to put together and then you can just pop it in the oven and forget about it until it's time to eat.
This dish goes so well with the Roasted Vegetable Couscous.
Green Olive Chicken
Prep Time: 10 Minutes
Cook Time: 50 Minutes
8 chicken thighs with skin on (if you prefer less fat, remove the skin)
1 1/2 Cups/250 grams of cherry tomatoes
1/2 Cup/100 grams of pitted green olives cut in half
4 garlic cloves cut in half
Zest and juice of one lemon
A bunch of flat leaf parsley finely chopped
Salt and pepper to taste
Preheat oven to 350 degrees F.
To make marinade, mix olive oil, salt & pepper, olives, cherry tomatoes, zest of lemon, juice of lemon and parsley in a bowl. Set aside. Meanwhile, place half of a garlic clove underneath the skin of each chicken thigh. Then pour the marinade over the chicken until well covered. Bake in the oven for about 50 – 60 minutes. Remove and cover with foil for best results. Serve about 15 to 20 minutes after being removed from oven.
Goes well with any couscous or vegetable dish.
