Who says you can't ave cocktails for breakfast? Well, not me! Okay maybe a virgin cocktail. This is a very light and fresh way to start you day.
This morning, I was watering the grass, when I noticed at least a 12 apricots on the ground. Well, I guess that means they are ready for picking. We haven't been living in this house long, and I didn't even realise we had an apricot tree! Well, I do now. So, a smoothie for breakfast it was.
Fruit Cocktail Smoothie
Makes 2 cocktail smoothies
4 tablespoons fresh squeezed orange juice
1/2 cup milk
1 cup crushed ice
zest of orange
1 tablespoon sugar
A couple of strawberries slices (garnish)
Combine the fruit, orange juice, milk and crushed ice in in you blender. Wizz it up and voilà! I did a orange sugar rim on the glasses by putting the sugar on a plate with the orange zest and a dash of orange juice. Turn your glasses upside down and coat the rims. Pour in your smoothie and garnish with a strawberry slice. You can always have it with Old Fashioned Pancakes with Fruits of the Forest, if the smoothie isn't satisfying enough!
