Asparagus seems to be everywhere I go these past few weeks, so we have been eating quite a lot of it. We do aim to eat seasonally, and in these parts it is the season for asparagus!
This can be put together in no time and a great side dish to Grilled Strip Loin with Black Peppercorn Sauce.
Fresh Spring Stir-fry
In a large skillet set over medium heat add the garlic and olive oil. Cook for a minute until garlic is slightly browned. Add the red peppers and zucchini and cook for about 10-12 minutes. Remember to stir them while they are cooking so they don't stick and evenly cook. Now add the asparagus and continue to cook until cooked but still has a bit of a crunch, so about 10 minutes more. Add the sun-dried tomatoes and salt. Stir to combine the flavours and remove from heat.
It really is delicious and easy.
