Some mornings after everyone has left the house, I treat myself to a delicious breakfast. I'm sneaky like that. Since nobody in the house looks around the blog, it remains my secret!!! They don't know about all the goodness they are missing out on. I plan to keep it that way for as long as I can. This mornings treat came after a stressful evening of the car breaking down, and emergency vet visit and a teenage daughter melting down over everything possible. Nothing better than waking up & starting fresh. After a beach trot with the pooch, I treated myself to this. French toast topped with apples, pecans and bacon. Yes, bacon. It's been a stressful 24 hours. I used to think that bacon and French toast did not belong together in any kind of combination. Disgusting, was what I really thought. Guess what? That attitude has changed beyond recognition. In fact, I think they should get married. In this dish, not only do we have French toast with bacon. There are also warm brown butter apples and pecans. I don't think I really need to say much more. I probably will though. If you have never had brown butter apples, now is your chance. They are so delicious and so easy. The key is using lots and lots of butter. Yup, a real low calorie breakfast here. The apples are cooked slowly in the butter with brown sugar and a little bit of water. It takes about 15 minutes in total, so that really isn't too long. They are also versatile and can be used in desserts, with breakfast or on their own. Sometimes I make them and have them with yoghurt or cream. Equally delicious. As it is fall and apple season, they are ideal right now. Next time you have time for a leisurely breakfast or are recovering from stress, like me, give this delicious toast a try. Promises not to disappoint the taste buds. French Toast with Browned Butter Apples Makes 4 Slices / Prep time: 10 minutes / Cook time: 20 minutes Ingredients 4 Slices of bread 2 Eggs 1/4 Cup/60 ml milk 1 Teaspoon cinnamon 3 Apples, peeled cored and cut into 1/2 inch slices 2 Tablespoons brown sugar 1/4 Cup/60 grams butter 3 Tablespoons water 1/3 Cup/40 grams pecans, chopped 4 Strips bacon Method In a medium sized skillet set over medium high heat add the butter until melted. Add the apples and stir well. Reduce heat to medium low, add the brown sugar, water and cover. Cook apples for a further 10 minutes, checking and stirring occasionally. Remove skillet from heat and pour apples along with the browned butter in a dish and set aside. Cook the bacon. Remove from pan and cut up or crumble. Set aside. Whisk together the eggs, milk and cinnamon. Dip the bread in the egg mixture and coat on each side. Place in the reserved skillet and cook on each side until golden brown, about 2-3 minutes per side. Remove from pan and set aside. Serve French toast topped with warm apples, pecans and crispy bacon. Drizzle over remaining browned butter. Serve immediately. Oh, that sounds like a super stressful day! Love those brown butter apples and I'll bet they'd be delicious on top of waffles. too. Hope today is totally uneventful for you!

This is a lovely combination of flavours! And so well deserved for you when you had all those troubles happening at once. If I lived near a beach like you do, I'd definitely go for a little beach trot. :)

I've quite honestly never been a huge fan of french toast, it was never something I ate growing up, and didn't even really know what it was until i started cooking school. That said, I've made my fair share of them as a professional chef, and i always find that recipes that use toppings like yours are the best!
