I haven't had a cheese ball in years and years. So long in fact, that I forgot they even existed. However, back in November I was at a friend's Thanksgiving dinner and she served a cheese ball as a before dinner nibble. So pretty and tasty. I thought about it for a while and decided I had to make one for the party. I just kind of winged it, but it turned out great and very festive looking indeed. Luckily, I took the time to write it down as I did it. So, I do have a recipe to share with a photo for this party platter.
You can put anything on your platter you like. I served it with crackers, salami and chorizo. It is easy to make, can be done in advance and makes a nice addition to a Christmas table.
Cranberry & Pistachio Goat's Cheese Ball
8 oz/200 grams soft goats cheese
3 oz/75 grams of cream cheese
1/2 Cup/50 grams pistachios, chopped
1/2 Cup/60 grams dried cranberries, chopped
Zest of half a lemon
Juice of half a lemon
2 Spring onions, minced
Small bunch of fresh parsley, finely chopped
In a large bowl combine the goats cheese, cream cheese and the lemon juice. Mix until the two cheeses are combined and relatively smooth. Add half of the pistachios, half of the cranberries, the onions, lemon zest and parsley (reserving a little). Stir well to combine. Form into a ball. In a bowl toss together the remaining pistachios, cranberries and chopped parsley. Roll the cheese ball in the mixture until it is completely coated.
Wrap and refrigerate until ready to serve. Serve with a selection of crackers and deli meats.
