These cookies are so easy, chewy and tasty. I love coconut, so for me they are a real winner. They are crispy at the edges and chewy through the centre. Delicious! This morning with the rain (again) and a holiday Monday here, my son helped me make these. So easy. All done in a few minutes and then you can just pop them in the oven. From start to eating in less than 15 minutes. I call that quick and easy!
Chopped nuts would make a nice variation in these cookies, or even raisins or chocolate chips. Anything for that matter. Next time I think I will add chopped walnuts as they are possibly my favourite nut in a cookie.
Coconut Drop Cookies
Makes 30 cookies, approximately
1 1/4 Cup/155 grams of flour
1/2 Teaspoon of baking soda
Pinch of salt
1/2 Cup/110 grams of butter
3/4 Cup/150 grams of sugar
1/2 Teaspoon of vanilla
1 1/4 Cups/75 grams coconut
Preheat oven to 350 degrees F and have ready a large baking tray.
Combine the flour, baking soda, salt and set aside. In a large mixing bowl, mix the butter and sugar on high speed until light and fluffy. Add in the egg and the vanilla and continue mixing for a further few minutes. Stir in the flour mixture until combined and then add in the coconut until just combined.
Mound spoonfuls onto a baking tray at least a couple of inches apart. Bake for about 8-10 minutes or until cookies are light golden brown and crispy at the edges. Cool on a baking rack. Can be stored for up to 3-4 days in an airtight container.
