Just one week to Christmas! So, if you are looking for some last minute baking ideas, look no further!
Here I have put together some cookies that are easy to make ahead and put in your freezer for Christmas. They make lovely gifts when put together on assorted trays, great for taking out of the freezer when unexpected guests arrive and for just enjoying yourself.
Cookies and bars don't have to be labelled "Christmas" to serve during the festive season. There are so many baked treats that suit the season and here are a few of my favourites.

It wouldn't be Christmas without them! For as long as I can remember these Snowballs have been on every single Christmas cookie platter. Delicious little chocolate coconut bites that are no bake which makes them very easy!

These are super easy drop cookies with a chewy bite and full of a nutty flavour. An easy addition to your Christmas cookie platter.
Raspberry Chocolate Cream Cheese Brownies
Oh...my....goodness! These are almost too good to eat. Yes, almost. I am probably going to have to say this is the best combination of flavours, ever. I have had brownies, cream cheese brownies, raspberry cheesecake, chocolate cheesecake and so many more combinations that include all three. However, these are the best by far. Hands down. Enough said!
Winter White Chocolate Truffles
Continuing the Christmas traditions today with these Winter White Chocolate Truffles. Although these are not a tradition I grew up with, I adopted them over the years. Now, not a Christmas goes by when I don't make some kind of truffles. These white chocolate ones using Lindt chocolate and the secret ingredient of Cointreau are Christmas decadence at it's finest.
Orange Chocolate Chip Cookies
On of my absolute favourite chocolates of all time, is Terry's Chocolate Orange. You know those chocolate balls of orange segments. I could easily eat a whole one. Easy. They are divine! So why now add a bit of orange to your Christmas baking to let that flavour shine through!
