Clearly this is a mess and it isn't really a recipe, but I have to share it today. There is a very special birthday in our house today. My baby boy is turning 11!!! I have no idea how that happened, but it did. Such a chiche, but it does seem like yesterday that I was rushing off to the hospital. In many other ways, it does seem a lifetime ago.
Cutting a very long story short, he hates birthday cake. I am looking into how that strange oddity has happened! So, this was on his dessert menu for today as it is one of his absolute favourites.
Chocolate Dipped Strawberries
1 Pint of fresh strawberries
5 oz/125 grams dark chocolate, chopped
1/2 Cup/120 ml heavy cream
1 Tablespoon golden syrup
In a saucepan set over a saucepan of simmering water, heat the cream until it comes to a soft boil. Whisk in the golden syrup and the chocolate. Remove from heat and continue to whisk until you have a smooth consistency.
You can serve them like a fondue with the chocolate on the side for dipping, or you can dip them ahead of time and keep them in the fridge until ready to eat. If you do it this way, the chocolate will harden. Either way, they make a very simple and lovely dessert. If you do dip them before hand, place them on a wire rack to cool and set. Otherwise they will stick to the plate and the chocolate likely will come off.
