Okay, so it's been a bit of a slow week for me on the blog. Slow meaning stopped actually. I have been completely 100% out of action in every single way. I mean in bed, curtains drawn with no light in sight for days. Thankfully, today I woke up feeling a whole lot better and the nasty virus seems to have taken a hike.
I would love to know why we can't get sick on days when things are organized. Like the laundry being done, groceries in the house and maybe some frozen meals in the freezer? No, it has to happen when everything is utter chaos and then it all just spins out of control. Well, I know it doesn’t actually spin out of control, but that is the way it feels. I also learned this week, that I desperately need to teach my kids to cook!
In the meantime, I managed to pull myself together today. There was the first cooked meal since Tuesday. Requested by the kids, Chicken and Mushroom Stroganoff which is an absolute favourite of theirs. They have been living off whatever they could haul out of the fridge and a take out from up the road. So, they were appreciative which is nice to see. As for me, I still can't eat. I am sure when the appetite does return, I will eat what ever is left in the house.
After that was finished there was still energy to throw together these very deliciously chewy brownies. I think the brownie collection on the blog is growing. Each one unique and delicious it it's own way. These are chewier than my regular brownies and have the addition of walnuts, which I love. If you are in search of a chewy brownie, you just might want to give this one a try.
What made these brownies so chewy is more sugar and less flour! I know, good for the sweet tooth right? But sugar does add moisture and flour makes things cakey. So, less flour it is for chewier brownies.
I know I am like a broken record when I say these are best the day they are made. But it is true and the same for most baked goods. However, they do store well in an airtight container for about 2 days. As well, they can go in the freezer for several months if you are a very organized baker!
Chewy Chocolate & Walnut Brownies
Makes 16 / Prep time: 10 minutes / Cook time: 20 minutes
4 oz dark semi sweet chocolate
1/2 Cup/115 grams butter
1 1/4 Cups/250 grams sugar
1 teaspoon vanilla
1/2 Cup/65 grams flour
1/2 Cup/65 grams chopped walnuts
Preheat oven to 350 degrees F. Grease and line with parchment paper an 8 inch square baking tin. Set aside.
In a small saucepan set over low heat, melt the chocolate and butter together. Stir until melted and remove from heat.
In a large mixing bowl, whisk together the eggs, sugar and vanilla. Mix with a manual whisk for just about a minute. Stir in melted chocolate until just combined. Gently fold in the flour and salt until combined. Toss in the walnuts and stir.
Pour into prepared pan and bake for about 20 minutes. A toothpick inserted in the centre should come out with a few crumbs.
