Cherry season has arrived and the deliciousness is endless. Coming your way today with these Cherry Chocolate Chip Blondies. Not a brownie, not a cookie, but a blondie. And a cherry filled one at that!
It's official, it's summer! Okay, technically it was yesterday but today is the official last day of school, which means today is officially summer in my books.
Okay, I'm not a kid and I'm not at school, but I still get those over excited summer feelings on the last day of school because I'm a mom. No more homework helping, snack packing, clothes ironing (okay, I don't do that anyway), morning rushing, ...No, none of it until the golden days of September. I'm free.
Free possibly to have two bored teenagers around the house, but nonetheless, free.
I'm sitting here writing and thinking first of all about everything I want to do this summer. Which at the end of the day boils down to a whole lot of everything and possibly not much. If that makes any sense at all. In fact, I am just happy enough with beach walking, patio sitting and a little wine drinking. I'm hard to please like that..ha! The kids made it through another year of school and that's good enough for me right now. I'll take it!
The one thing I do know summer will include and that is a whole lot of food. In the past, I have had tendencies to go off cooking in the summer months. It's usually on the blazing side of an inferno here, so cooking becomes low priority. Like too hot for a waistband if you know what I mean. I don't have AC, but have learned over the years how to deal with the heat of the intense southern Spanish summers.
You learn that if you want to cook, you do all your food prep before sunrise. Using the oven is quite often a form of self harm. The barbecue at dusk becomes your best friend. And cold food is the best things since sliced bread.
Yes, all of this and so much more you learn to deal with when living in a fan driven furnace for three months straight.
Right now, however, we are comfortable sitting below 30 degrees which means I am still firing up that oven. Soon to meet it's retirement I'm sure.
The other day after a quick trip up the road and spying some deliciously ripe cherries, I made these blondies.
A blondie? Yes a blondie. If you have never had one and have no clue what I am talking about, it's basically a vanilla brownie. I know, strange right?
Trust me, not strange at all. If you like brownies, chocolate chip cookies and dense textured baked goodies, you will love these. I had a basic blondie recipe from a million years ago and whipped it up the other day and added the chocolate chips and cherries for a bit of variety. They reminded me a bit of a fat chocolate chip cookie. At the same time a bit like the texture of a brownie, but tasted nothing like it of course. They were a hit and all gone with friends of the kids. I only managed to get one, which isn't a bad thing really..haha!
Okay friends that's about all for today. It's Friday night and I have a warm patio and a chilled bottle of wine waiting for me. Happy baking and say cool!
Cherry Chocolate Chip Blondies
Makes 16 / Prep time: 10 minutes / Bake time: 20 minutes
1 Cup/120 grams flour
1 Cup/200 grams brown sugar
1/2 Cup/115 grams butter, melted
2 Teaspoons vanilla
3/4 Cup/130 grams chocolate chips
1 Cup/140 grams fresh cherries, pitted and roughly chopped
Preheat oven to 350 degrees F. Grease and line an 8 x 8 inch baking tin. Set aside.
In a medium bowl, whisk together the melted butter and brown sugar. Mix just until combined. Whisk in the vanilla and the egg. Stir in the flour.
Fold in the chocolate chips and chopped cherries.
Pour into prepared pan and evenly smooth out. Bake for around 20 minutes or until a toothpick inserted comes out with a few crumbs.
Place on a wire rack to cool. Cut into 16 squares.
