This is so basic and not really a recipe at all. However, it is one of my favourite breakfasts.
Tostada con Tomate or Toast with Tomato is a very traditional breakfast here in Andalucia. Moving over here a million years ago, I thought it quite a strange breakfast. However, I learned quite quickly to love the subtle flavours of these little bites. Quite often it would be served with ham. Not just any ham but Jamon Iberico. Not a flavour that can be easily described as there is nothing in the world like it. That would be my son's favourite as he is the connoisseur!

Cleaning out the freezer earlier this morning I found some apricots from earlier in the summer. I thought for sure I had used the last of them, but there was one last freezer bag. Out they came to add into this delicious crisp below.
Honestly, I haven't had much time to cook this past week. I am hoping this week that changes. So, lets start with this Wild Asparagus Risotto dish. I really love the thin wild asparagus you get around these parts. I just picked some up this weekend and it was delicious. Just used it in this very creamy risotto. A great lunch dish!
Could not think of one thing in the world this evening to have for dinner. I was aimlessly walking around the supermarket around 5:00 pm hoping something would pop. Well, it didn't really. That is until I got home back in the kitchen. Why not Green Pesto Chicken Kebabs? I remember having them years ago at a friend's summer dinner party. They were delicious. Okay, I know she made her own pesto and every single morsel of food she makes is delicious.
Anyway, I cheated with these and used the supermarket kind. Mind you, it s a high quality Italian one. Certainly that counts. This dish contains TWO ingredients. It doesn’t get a whole lot easier than that. It was served with the Minted Yoghurt Dip. Literally, just finished making this and it is soooo good! Simple and delicious. It looks pretty as well!
