This is a great take on a lighter potato salad. I have made it at least a half a dozen times these past few summers and it is always appreciated and enjoyed. Yesterday, we had it with lunch.
I found this recipe on the BBC Good Food website about 2 years ago. I think I may have changed it a little, but pretty much followed what they did. So, I am not taking credit for this one!!! One more thing, not to do with potato salad. We are heading off today for a week's vacation. Just about time to say goodbye to summer. I will be back posting on the 2nd of September. I love the chewy and rich flavour that this flapjack has to offer. In an attempt to give it a different flavour, I used part brown sugar and part honey. The combination, delicious!
On a very different note, I am now making it easier for everyone to print recipes. This will be a process as each recipe has to be done individually. However, if you scroll to the end of the recipe you will notice a downloadable file that you can print. I will do this to each new recipe I add and will start going back through the archives and making all recipes printable! Goes with summer and everything to do with summer.
It's nearing the end of August, but the barbecue sill has some life left it it yet. I honestly thought last week I was done with summer, the beach, the crowds, the HEAT, barbecues, and every single little thing to do with summer. But.....I have had a renaissance today and I am feeling it again! So, it's not quite time for winter roasts and hot chocolate yet! Okay, so this is really good. I mean really good! I have not long finished making it for dinner and had a little taste. Delicious!
I do love stuffing chicken breast with all kind of things. This particular Italian style is really flavoursome. Very strange that we are serving it with mashed potatoes, but that is what my daughter requested. However, there is a green salad as well. I only cooked two chicken breast to serve the four of us this evening. I just think that is enough as it is quite a filling chicken. So, below I am saying that it serves four. However, if you are extra hungry, this recipe will only serve two and you should double everything to make it a four person dinner. Hope this helps. There is something about figs. I can't quite figure out what it is, but I really love them.
When I was out shopping yesterday morning, they were on sale and all perfectly ripe. I bought just a few as they don't last long. My plan was to put them in a salad. Well, that didn't quite happen, Instead they turned out into these little canapés. I was planning to cook something hearty for dinner last night as it was getting a bit chilly outside. That didn't quite happen either. We ended up with tapas and these little tarts being the centre of attention. |
