Oh...my....goodness! These are almost too good to eat. Yes, almost. I am probably going to have to say this is the best combination of flavours, ever. I have had brownies, cream cheese brownies, raspberry cheesecake, chocolate cheesecake and so many more combinations that include all three. However, these are the best by far. Hands down. Enough said!
There is nothing better than a good piece of fresh cod. It sure takes me back and you just can't beat that flavour. Crowning up in Newfoundland, I have eaten my share of cod, but as a kid didn't appreciate it as much as I do now. I would give anything right now for a fresh cod caught down the arm. That's not going to be happening today. No. Since I live a million miles away, I have to make do with what I can get at the local fish counter. So "fresh" from the bay it may not be, but it sure was pretty delicious.
Once again, like clockwork, summer has arrived. And I mean with a bang. A 40 degree bang! Not sure how I feel about that with no where to hide. No chilled air conditioned rooms to crawl away into during the mid day furnace. No freezer big enough to squeeze into. Not even a cold floor to lay on. Just hot, like baking hot.
This too will pass as it always does. Everyone will crawl our of their sun soaked houses in hopes for cooler temperatures. In the meantime, we just sit by a fan and wait.
As for dinner, what dinner? It is seriously too hot to even consider food, cooking and honestly even eating. Making a sandwich yesterday seemed like somewhat of a colossal effort. Today as the temps have dipped a few degrees, I was able to put together this very yummy salad. Yes, it does require the oven. I left the kitchen during that stage and returned long enough to take out the vegetables and turn that thing off.
Great hot or cold, this salad could be one to keep in mind for summer barbecues and pot lucks alike.
I've done the research. Tested recipes. Failed. Failed again. Then, finally succeeded! Look no further for the most delicious, suclant, fall off the bone ribs! These ribs get their flavour from a dry rub overnight and then slowly cooked in the oven. Topped off with a home made barbecue sauce for some extra deliciousness! Try them the next time you feel like going out for ribs and you won't be disappointed!

I have grown to love these tiny little fried fish. I used to always associate anchovies with something I was never ever going to eat. Well, times change. If you like any small fried fish, I promise you will love these. They have to be fresh and luckily these we caught local the day I cooked them. Can't get a whole lot fresher than that. Served with just a squeeze of lemon and they make the perfect tapa!
