This really is a light pasta dish that can even be eaten on these summer days. Not to mention the fact that it is all done in 20 minutes. We love meals like that!
This is a great barbecue dish. These can be found served almost every where here in southern Spain and the flavours are fantastic. They most commonly use pork, which I love also, but these are chicken. They are traditionally called Pinchos Morunos in these parts and it would not be a barbecue without them.
Why not give this salad a try this weekend. I paired it with the Chicken Skewers because they go so well together. As it is a very filling salad, you will probably find this and the chicken is just enough to serve at a small barbecue. I wouldn't recommend serving other heavy salads with this. Maybe something like a green leafy salad would be a nice choice if you are looking for another salad to go with what you are serving.
I mention below that you should refrigerate this salad for 4 hours before serving. Please, don't try and skip this step and serve it immediately. Otherwise, it will be quite bland. I found that the flavours really need time to blend. Then, I promise, it is really yummy.
This is a very quick and light dessert for those hot summer days. We had them last night after a barbecue and they were a refreshing way to finish off the meal.
They can be put together in no time at all and left in the fridge for a few hours before serving.
I know it's summer and the last thing most people are thinking about is baked pasta dishes. However, this is really really good and I think sometimes even Summer deserves hot out of the oven pasta! This particular pasta dish is just so yummy. I use my staple Marinara Sauce in it as I do with most tomato based dishes. If you find this step too tedious, just use one that is ready made from your grocery store.
