It's just about spring. I don't know who else is happy about that, but I am thrilled. Good bye winter, adios, see you later, and the rest! It's not been the world's most inspiring winter so I am ready to embrace spring with flowers, butterflies and unicorns. Yes, even unicorns.
What better way to get into the season than with this super easy & tasty stir fry. If you got 15 minutes, you can make it happen. It is great on it's own as a quick lunch, as a side dish, served over rice, noodles, chicken added...you get the picture. I had it just like this shown and delish!
Since I haven't been cooking a whole lot lately, the husband has stepped up to the plate and has been churning out some pretty tasty dishes. I gotta' say, I am not hating it. This chowder, he has made several times now and I absolutely love it. So, today I got it into my head to recreate his chowder. A great warming dish that is wholesomely good and just downright delicious!
Is there such a thing as too easy? Well, I am all for easy when it comes to food. This is a classic case of minimal ingredients, zero skill with great results. Sometimes life gets too busy or hectic to put a three course meal on the table. I say reach for the pasta pot!
