I have had a serious case of the blahs lately and keep hoping it will pass. Somehow, 2017 just isn't working for me yet. Well, it had better shape us soon because I just noticed we are sailing straight towards the end of February. March sounds nice right about now.
In any case, I have still been puttering around the kitchen, just not making a whole lot of new dishes. There were a few of late thought now that I think about it. Including a very picante seafood chowder, a parmesan topped chicken risotto (yes, that a thing and it was delicious), as well as a blueberry cake, some kind of cookies that I can't even remember now and several other dishes. Like I said, because of the serious blahs, I didn't manage to get my mojo on to do the photography or even take recipe notes as I cooked. I am getting over that now and and am hoping to get back to sharing regular dishes with all of you very faithful readers. Thanks for being patient.
So, moving on and getting back into food, this is a great mid week dish for the whole family. We had it yesterday for lunch and it was absolutely delicious served with baby roasted potatoes and steamed broccoli. The dish was so flavoursome that the side dishes didn't need to be too fancy. This is a recipe that has been on my mind for years, yes years. I first, and only, ate them at Casa Flores here in El Puerto. Sadly, that restaurant has since shut down. Sad. At the time, I thought they were the best thing I had ever eaten. Finally, I got around to making them and discovered that they are pretty time consuming! Like not a quick appetizer. I adapted this recipe from Karlos Arguinano and is just downright delicious. Worth the time and effort. Even if you think you don't like seafood, you just might love these.
It's just around the corner, the day that we all love or love to hate. Valentine's Day. I know it is traditionally a romantic love kind of day, but I like to think it can be a any kind of love day. Even if there is no special one person in your life, you can still treat yourself to something sweet and yummy. These little bite size sweetheart brownies might just do that trick. They are pretty darn cute and, of course, delicious!
A few weeks back I made a blueberry lemon loaf cake that was delicious, like really delicious. The only problem was all of the blueberries sunk to the bottom of the cake. Oops! I was planning to write a post about it, but it was eaten too quickly, like before it cooled quickly. And not just by me for a change. Today, I decided it was a good idea to make that cake again as it was such a success the first time. This time around, there were no blueberries to be found in the supermarket, so raspberries it was. Just as delicious and no sinking berries.
Finally I have a new dinner to share. It has only taken just about forever as I as I am pretty sure it is the first of 2017. I got some catching up to do! In any case, a little inspiration hit and this very warming, hearty and somewhat exotic curry appeared on the dinner table. I have made lentil curries in the past, or Dal as they are properly named, but this one was by far the best out of my kitchen. I loved the coconut flavour with hint of spice and a little zest from the lime. Overall, great week night dinner.
