A very quick salad that we served with Saturday night's dinner. Sometimes salads just need to be quick and simple. I think it took about 2 minutes to put this together. So, if you are in a rush, this salad might just fit the bill.
I loved the saltiness of the almonds in this salad. We just used a basic vinaigrette to go over this salad, but I think a honey mustard dressing would work a treat!
Almond and Feta Leafy Salad
3 Cups/250 grams of mixed salad greens
1 Cup/150 grams
1 Cup/150 grams of feta cheese, crumbled
Small handful of salted almonds, roughly chopped
Add the salad greens to a large bowl and toss over the tomatoes, feta and then almonds. Not much a real recipe, but just a simple salad idea. Served with a light vinaigrette and bread on the side.
