Looking ahead into this weeks menu and there sure are a lot of home comforts on the table. I am an old fashioned girl at heart and love nothing more than comforting wholesome food. The kind of stuff that fills you up and keeps you coming back for seconds. You know the kind of food I'm talking about. Think Betty Crocker 1958 and that that just might about sum it up. Sure there are a few twists and turns along the way to keep it interesting, but deeply rooted there is traditional comfort food. So, dive in and don't apologize for wanting seconds.
Monday These Loaded Chicken Quesadillas are a great way to kick off the week. They might not be the ultimate comfort food, but they sure are good. And surely if you add enough cheese to anything is classifies as the all mighty comfort food.
Tuesday You can never ever go wrong with a traditional Spaghetti Bolgonese . Make a big batch of sauce and freeze it if you like. Then dinner really is ready in minutes.
Make ahead: This sauce can easily be made ahead of time and put in the fridge until dinner time. Then the only thing you have to do is heat it up and make the pasta. Dinner done!
Wednesday Soup day is comin' at you this week with this Spiced Moroccan Soup. I made it for the zillionth time a few weeks back and still have some in the freezer. Great for days when you have no time to cook!
Thursday I absolutely love parsley sauce, like really LOVE the stuff. This Crusted Perch with Parsley Sauce is easier than you think and can easily make a week night dinner. Serve it with some creamy mashed potatoes and you got comfort food in a nutshell.
Make ahead: The topping for this fish can be made ahead of time and kept in the fridge until you are ready to top the fish and bake it. As well, the sauce can be made several hours before hand and then reheated over a low heat.
Friday On the blog I have this Potato & Spinach Gratin listed under side dishes. Normally, it would probably be considered just that but I also think it can moonlight as a main course. Come on, it has potatoes, spinach and cheese so what more could you ask for! Just eat more of it to fill up..ha!
Make ahead: This is an easy make ahead dish that you and prepare, put in the fridge and then bake when you are ready to dive into dinner.
Saturday This Baked Parmesan Crusted Chicken is a great way to see you through your weekend. I made it last year one busy day and I was hooked on the stuff. I made it again and served it cut up into a creamy pasta. Delicious. That recipe is in the works and will be hitting the blog in the next week or so. Stay tuned folks.
Sunday If you are looking for the perfect Sunday lunch this weekend, I got it right here with this Roasted Pork Loin with a Sweet Sherry Sauce. Served alongside some Fall Roasted Vegetables and you are digging into mom's home cooking. Eat well my friends!
Dessert When I was younger, I always made sure I didn't eat too much so that there was room for dessert. Some things really don't change with age! This Caramel & Chocolate Layer Cake is worth making room for.
