So, I had somewhat of an unsuccessful start to the week. Mondays! A few weeks back I decided that each week I would try to use an ingredient that I have never had or cooked with before. Sounds exciting, right? My choice of new ingredient this week was yucca root. I saw it in the produce section of my local supermarket, as I do every single week, and decided why not. I decided roasting it would be a good idea, as everyone likes roasted vegetables. I made a spicy marinade for the yucca using garlic, paprika, coriander and chillies. I made a paste and evenly spread it out all over my yucca slices and popped it in the oven to roast. After 40 minutes they looked cooked through and delicious. Well, delicious they were not. In fact I would describe them as inedible. The outside was crispy and even golden, and the inside was white and fluffy. Seems very promising. But it just tasted like starch. I mean in a way, that your mouth felt almost like sandpaper after biting into them. So yucca root, I might give you another try sometime, just not this week.
